I literally made this recipe two weeks ago, looked at the calendar and could not believe where the time had gone! How was it Easter Sunday in just a few days? Luckily my Lemon Blueberry Energy Bites are as quick and easy they are to post as they are to make! It really is just gathering the ingredients, mixing, rolling and done! So let’s get to it!

Gather Your Ingredients!
Most of us have the ingredients already in hand. If you are like me, I always have protein powder in the house for my morning smoothies and to mix into my favorite baked goods. The hubby and I are cutting our carbs as we age, so finding Zone Perfect’s Carbwise protein powder has been a perfect addition to our pantry. One serving, two scoops, contains 30g of protein and 3g of sugar. That’s just 3 net carbs! Yes, please! The perfect ingredient for my Lemon Blueberry Energy Bites!
Next up, grab the nut-butter of choice, preferably all natural with that little bit of oils in the blend. Adding into the mix is gluten-free rolled oats, my favorite local honey, the zest of a lemon and a handful (or two) of dried blueberries!

Roll those Lemon Blueberry Energy Bites
Now that you have all of your ingredients, toss them all in a medium-sized bowl. Grab a wooden spoon and mix until blended. These energy bites are really that easy. Scoop up a tablespoon of the mixture and using your hands roll it into a ball. Keep doing that until all your batter is gone. The recipe will make 12-14 Lemon Blueberry Energy Bites.
Now the fun part. You can skip it or do like me and go for halvsies. I rolled half of my energy bites in fun Easter-themed sprinkles. How cute do they look?!? Delicious too!

Lemon Blueberry Energy Bites
Ingredients
- 1 cup all natural nut butter
- ⅓ cup protein powder Zone Perfect Carbwise Fruity Cereal Protein Powder
- ½ cup rolled oats gluten-free
- 1 tbsp local honey
- 1 tsp vanilla extract
- ⅓ cup dried blueberries
- zest of 1 lemon
- sprinkles for decorating optional
Instructions
- Place all your ingredients in a medium-sized mixing bowl.
- With a wooden spoon, mix until combined.
- Using your hands, roll into tablespoon-sized balls.
- For fun, roll in sprinkles of your choice.
- Place in airtight container and store in the refrigerator until eaten. Can be kept in the freezer up to 3 months.
