Fun Summer Frozen Yogurt Treats

It’s only May and the weather is already starting to heat up! With warmer temps comes the never-ending struggle to not eat the entire gallon of ice cream tempting me every time I open the freezer. A little bowl here, a little bowl there and before I know it, it’s gone!

I have been on the hunt for warm weather treats that are healthier and a little more filling. I was excited when I learned I would be working with Nuzest, a Seattle company, along with my peeps from Fit Approach and my #sweatpink sisters to come up with some fun ideas using their Clean Lean Protein Golden Pea Protein Powder and Protein Bars. 100% plant-based proteins, gluten-free, soy-free, 100% vegan, low fat and low carb with no added sugar, how can you go wrong with that?

Inspired by my run BFF, Cindy, who is a self-professed snacker, I wanted to find a treat she can enjoy, get filled up while still being a healthier option. Then I thought, why not go one step further and create a couple of treats that your littles will enjoy as well.

Using one recipe and tweaking it just a little, you can have two frozen yogurt protein rich treats! Chocolate Peanut Butter Bites and Red, White & Blue Berry Popsicles!

To start, make a yogurt-protein base. The ratio I liked best was 2 cups full-fat yogurt to 1 1/2 scoops of protein powder. To this I added 1 tablespoon of natural honey.

For the Chocolate Peanut Butter Bites: add in 2 tablespoons of peanut butter and 1/4 cup mini chocolate chips. Blend.

To create your bites, I used silicone muffin molds placed into my muffin tin. Picking up the frozen treats with your fingers and eating them would have been messy, so I loved Cindy’s idea of adding granola to the bottom of my muffin molds first. It makes an added plus if you want to make this a yummy fast to-go breakfast treat as well!

Spoon in the yogurt-Protein mix until 2/3 full. Sprinkle on some crushed peanuts and more mini chocolate chips and for an extra punch of peanut, warm up some peanut butter and drizzle on top! Yum! Now simply place in your freezer and wait. I know, that’s the hardest part 😂

Remove your frozen treats from the freezer 3 hours later and remove them from their silicone houses by holding the edges of the silicone and slowly turning them inside-out so that the bites release. Make sure to do this over the counter or a plate. Stack and store the bites in a freezer-friendly container so snacking fun!

You know what’s great about these bites? They are yummy fresh out of the freezer, as a grab-and-go. You can also plate them and serve them, either as a dessert or a breakfast. Lastly, why not toss them into the blender for a quick and easy smoothie!?! So many options….so little time!

For the RWB Berry Popsicles: divide into three portions. To one, add in 2 tablespoons of milk and 1 teaspoon vanilla. To another, add 1/8 cup mashed strawberries. To the last, add 1/8 cup mashed blueberries. If desired, and I did, slightly sweeten your berries before adding.

To create the popsicles, I used silicone popsicle molds. These are really cute because I get three shapes, standard, round and star-shaped. It was the start shape that inspired by red, white and blue theme. What a great idea for 4th of July?

Now, how to get layers in my popsicles was the challenge. And you know me, I thrive on challenges. Since I didn’t have any piping bags I went with the old standard, snip off the end of a plastic baggy. Into this I inserted my largest piping tip. If you don’t have one, no worries, I did this without as well.

The biggest take away from making the layers is consistency of your yogurt-protein blend. It can’t be too thin. You will also get ice crystals if you add too much milk into your vanilla layer. You can choose to eliminate the milk or add coconut milk instead.

To get nice pretty layers, pipe in each layer, tap the mold on the counter slightly between each layer, and then add the next. For even more distinct layers you can wipe the inside of the mold between layers as well. Who has time for that? I tried it and while it was easy to do on the circular mold, the standard popsicle and star-shaped were way too hard to do and I frankly gave up quick on that.

After you’ve added all three layers, making sure to fill to the very top of the mold, insert the popsicle stick and base. I’m going to add a link to the molds at the bottom of this recipe because I really liked that my popsicle molds had bases. If yours do, make sure to insert your popsicle stick into the base before placing it in your mold.

Just like the Chocolate Peanut Butter Bites, place your popsicles in the freezer, making sure they are on a flat surface and that the popsicle sticks able to fit once your close your freezer. This is particularly important if you have a drawer freezer like me. I had to move stuff around to get mine in. Once frozen, remove from the molds by pushing the bottom up out of the mold rather than tugging on the popsicle stick.

Once they were all removed, I quickly placed them in a gallon-sized baggie and put them back I. My freezer….except the popsicle that melted when I was taking my photos because it was a warm sunny day. That one went in my belly 😂😂

Two Fun Summer Frozen Yogurt Treats

Chocolate Peanut Butter Bites and Red, White & Blue Berry Blend Popsicles, using fresh healthy ingredients and plant-based protein powder perfect for healthy summer snacking!

Chocolate Peanut Butter Frozen Yogurt Protein Bites

Ingredients

  • 2 cups yogurt (full-fat or yogurt of choice)
  • 1 1/2 scoops Nuzest Rich Chocolate Pea-Protein Powder
  • 2 tablespoons peanut butter or other nut butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/4 cup granola
  • 1/4 cup mini chocolate chips or cacao nibs
  • additional mini chocolate chips, chopped peanuts and peanut butter for garnish

Directions

  1. In a large bowl, blend together yogurt, Nuzest Rich Chocolate Pea-Protein Powder, peanut butter, honey and vanilla. Fold in mini chocolate chips. Let sit 3 minutes.
  2. Line muffin tin with silicone muffin liners.
  3. Sprinkle the bottom of each muffin liner with enough granola to completely cover the bottom.
  4. Scoop Yogurt-Protein Powder mix into each liner until 2/3 full.
  5. Garnish each bite with extra chocolate chips and chopped peanuts.
  6. Warm 1 tablespoon of peanut butter in microwave-safe dish for 15 seconds, stir. Add additional time, if need. Drizzle each bite with melted peanut butter.
  7. Place flat in freezer for 2 1/2-3 hours. Makes 5-6 bites
  8. Remove from silicone liners and place in freezer-safe container until you pare ready to enjoy!

Red, White and Blueberry Frozen Yogurt Protein Popsicles

Ingredients

  • 2 cups yogurt (full-fat or yogurt of choice)
  • 1 1/2 scoops Nuzest Smooth Vanilla Pea-Protein Powder
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons to 1/8 cup crushed blueberries*, sweetened
  • 3 tablespoons to 1/8 cup crushed strawberries*, sweetened
  • popsicle sticks

Directions

  1. In a large bowl, blend together yogurt, Nuzest Smooth Vanilla Pea-Protein Powder, honey and vanilla.
  2. Divide into medium-sized three bowls.
  3. Into one bowl, blend in blueberries. Into next, blend in strawberries. Leave the last one.
  4. Prepare your popsicle stick with the molds if required.
  5. Using a piping bag with large #4 tip or a plastic baggie with the end snipped off, first pipe in the blueberry layer into each popsicle mold about 1/3 of the way up. Repeat with the vanilla layer. Lastly with the strawberry layer, tapping down each layer between.
  6. Add popsicle stick and base as directed.
  7. Place flat in the freezer for 2 1/2-3 hours. Makes 5-6 popsicles.
  8. Remove from silicone popsicle molds as directed and place in freezer-safe container until you are ready to enjoy!
  9. *use more or less depending on thickness when added. you don’t want it too thick or too thin. All of the recipes can be modified to be 100% vegan depending on the options you choose.
