Life is certainly getting busier with the holidays fast approaching. Black Friday is this week and I don’t know when I will find the time to get anything done. Who says life gets quiet when the kids move out is full of time, just sayin’.
We all need to remember to eat a nice healthy and hearty breakfast. Before heading out to run errands. Before starting on decorating the house. Or, like me, after a morning run. So, what do I do in this case?

I make a batch of overnight oats. I’m so over everything pumpkin, but I still wanted the Fall and Winter flavors. A little experimenting and I have two recipes in one post for you!
Vanilla Chai Overnight Oats and Gingerbread Overnight Oats. I hope you enjoy them. I make a batch of each or I make a double batch. The containers are great for on-the-road as well. Michael will take them on his business trips and stop and have one on the road, in the morning or even when he gets to his hotel and is feeling peckish.

Just so you know, I also love that I get a punch of collagen protein in each container by adding Great Lakes Collagen. Not adding collagen to your diet yet? Get with it peeps!
